Description
We make the taco flatbread and the flour ourselves — it's both fun and delicious. However, it's better not to overthink it at home and just buy ready-made corn tortillas, which can be found in the bread sections of large supermarkets. As for the filling, it features an interesting combination of shrimp, tomato, tangerines, and sweet potato, which we turn into a creamy texture by blending it with cream and honey. Step-by-Step Guide
Step 1
First, prepare the sweet potato cream. Cut the sweet potato into cubes and roast it at 355°F for 15–20 minutes, depending on the size of the tuber. Then, blend the cooked sweet potato with cream and honey in a blender.
Step 2
Next is the filling. Sauté the shrimp in a skillet with lemongrass salsa. Dice the mandarins.
Step 3
Spread sweet potato cream over the corn tortilla, then add mandarin cubes, followed by shrimp and cilantro. Garnish with sesame seeds.
