Shrimp skewers in lime and jalapeño marinade
Ingredients
- Peeled Cooked Shrimp 5 lbs
- Orange juice concentrate 1 cup
- Orange zest 2 teaspoons
- Lime Juice ½ cup
- Honey 5 tablespoons
- Ground Cumin 4 teaspoons
- Salt ½ teaspoon
- Garlic 6 cloves
- Habanero Pepper 4 pieces
- Lime 4 pieces
- Orange Bell Peppers 2 pieces
- Orange Bell Peppers 2 pieces
Step-by-Step Guide
Step 1
In a bowl, mix the orange juice concentrate, lime zest, lime juice, honey, cumin, salt, minced garlic, and finely chopped jalapeños. Add the shrimp and mix well. Transfer to a bag, seal tightly, and refrigerate for 30 minutes.
Step 2
Preheat the grill. Grease the grill grate with oil.
Step 3
Cut the red and yellow peppers into small pieces, and the limes into wedges. Alternately thread the shrimp, pieces of pepper, and lime wedges onto 12 wooden skewers.
Step 4
Place on the grill and cook for 3 minutes on each side until the shrimp are done, constantly brushing with the marinade.
