Shrimp Fritters (Tortillitas de camarones)
Ingredients
- Chickpea 5 oz
- Wheat Flour 0 oz
- Shallot 1 piece
- Vegetable Oil 10 fl oz
- Chopped Sage Leaves to taste
- Salt to taste
- Sparkling water 10 fl oz
- Shrimp 5 oz
Step-by-Step Guide
Step 1
Finely chopped the shallot. Did the same with the parsley.
Step 2
In a deep bowl, mixed the wheat flour and chickpea flour, shallot, parsley, and salt. Added half a cup of very cold water and a few ice cubes. Stirred until smooth. Folded in the shrimp. Then added a little more water — the mixture should be liquid but thick.
Step 3
Using a tablespoon, carefully dropped the shrimp mixture into very hot olive oil. Used tongs to turn the fritters.
Step 4
Placed the finished shrimp fritters vertically on paper towels to drain excess oil.
