Ingredients
- Coarse Salt to taste
- Mango 2 pieces
- King Prawns 20 oz
- Meyer Lemon Juice 1 teaspoon
- Rice Vinegar for Sushi 1 teaspoon
- Grated Lemon Zest 2 teaspoons
- White Pepper (whole) to taste
- Fresh basil leaves 5 pieces
Step-by-Step Guide
Step 1
Boil the shrimp in salted boiling water until cooked, about 3–4 minutes. Drain and transfer to ice water. Then drain again.
Step 2
For the sauce, blend the peeled and chopped mango, zest, lemon juice, and vinegar in a blender. Lightly salt and pepper. Blend until smooth, then fold in finely chopped basil.
Step 3
Peel the shrimp and arrange on a plate. Serve with the sauce.
