  • Rice Paper 10 pieces
  • Carrot 1 piece
  • Grated Ginger Root 1 piece
  • Garlic 1 clove
  • Napa Cabbage 2 pieces

Step 1

How to make spring rolls at home: Start by preparing the dipping sauce for the spring rolls. Pour soy sauce into a small bowl, add grated ginger (using a coarse grater), and mix well. Let the mixture steep for at least half an hour, or up to a day.

Step 2

Rinse the pork and pat it dry, then cut it into very small pieces. Boil the shrimp in salted boiling water (you can add some salt and a bit of dried dill) for about a minute. Peel the shells off (you can use pre-peeled shrimp) and cut each shrimp in half.

Step 3

Wash the mushrooms, peel them, and cut into small pieces. Peel the carrots and cut them into strips or grate them using a coarse grater. Rinse the cabbage leaves and dry them, then cut them into strips. In a frying pan, heat a couple of tablespoons of vegetable oil and add the minced meat or ground meat.

Fry over high heat for 5 minutes, constantly breaking up any lumps with a spatula. Peel the garlic and crush it using a garlic press. Add the mushrooms, garlic, carrots, and cabbage to the pan and mix well.

Sauté everything over high heat for 2-3 minutes, stirring occasionally. Add the shrimp, mix well, and remove the pan from the heat. Cover with a lid and let the filling cool in this position.

Prepare a bowl with clean, slightly warm water. Dip each sheet of rice paper into the water for a few seconds, then place it on a flat surface. Add a small amount of filling on top and roll everything into a roll. Continue dipping all the rice paper sheets and rolling them up with the filling.

Step 7

In a skillet, heat a couple of tablespoons of vegetable oil and place the rice paper rolls in the pan. Fry the spring rolls on each side until golden brown (about 2-3 minutes per side). Then, blot them with paper towels to remove excess oil and arrange them on plates.

Step 8

Cut the spring rolls into serving pieces and serve with soy-ginger sauce. Enjoy your meal!
