Seared Tuna with Parmesan, Arugula, and Mussels

Ingredients

  • Soy Sauce 10 fl oz
  • Peanut Butter 15 fl oz
  • Balsamic Vinegar 5 fl oz
  • Sesame Oil 5 fl oz
  • Dijon Mustard 1 tablespoon
  • Pompano fillet 20 oz
  • Olive Oil to taste
  • Herbs 1 bunch
  • Parmesan Cheese 0 oz
  • Arugula 1 bunch
  • Mussels 1 piece

Step-by-Step Guide

Step 1

Take 1 large mussel and cut it into very thin slices, marinating in a mixture of 50 ml of sesame oil, 250 ml of peanut oil, and 50 ml of balsamic vinegar for about 12 hours.

Step 2

For the fish marinade, mix the remaining soy sauce, balsamic vinegar, oils, and Dijon mustard.

Step 3

Cut the tuna into pieces measuring 3-5 centimeters and carefully shape them into squares or circles, as you prefer. Then, quickly transfer the fish to a hot skillet with a small amount of olive oil and sear for 2 seconds on each side. Place the fish in the marinade for 2-4 hours.

Step 4

Finely chop the herbs.

Step 5

Remove the fish from the marinade and coat it in the herbs. Carefully wrap the pieces in plastic wrap and leave them for 2-3 hours.

Step 6

Then, carefully slice the fish into very thin pieces and remove the wrap.

Step 7

On a plate, arrange the pieces of tuna, topped with thin slices of Parmesan, then add a leaf of arugula and the mussel pieces rolled up.
