Step 1

Slice the zucchini rounds into very thin strips.

Step 2

Place them in hot vegetable oil in a skillet, and sauté over medium heat for 2 minutes, stirring constantly to prevent burning.

Step 3

Crack an egg into the skillet, season with salt and pepper. Cover with a lid and cook for another 5–8 minutes (depending on your desired egg consistency). Serve immediately.
