Scottish quail eggs

Ingredients

  • Chicken Egg 1 piece
  • Garlic 1 clove
  • Mustard Greens 1 tablespoon
  • Wheat Flour 2 spoons
  • Breadcrumbs 5 oz
  • Quail Egg 12 pieces
  • Parsley 3 stalks
  • Chicken fillet 10 oz
  • Vegetable Oil 15 fl oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Cut the chicken fillet into small pieces and place them in a blender bowl. Add the parsley leaves, garlic, mustard, salt, and pepper. Blend until smooth.

Step 2

Place the eggs in a small saucepan and cover them with cold water. Bring to a boil over medium heat and cook until done, about 3–4 minutes from the moment the water starts boiling.

Step 3

Peel the eggs.

Step 4

Lightly beat the chicken egg with a fork. Season with salt and pepper. In separate plates, place the flour and breadcrumbs.

Step 5

Divide the chicken mince into 12 portions.

Step 6

Take a piece of ground meat in your hand and flatten it into a patty. Place a quail egg in the center and wrap it up.

Step 7

Cover it with the loose ends of the dough, then roll it into a ball. Repeat with the remaining filling and eggs.

Step 8

Coat each ball in flour, dip it in egg, and roll it in breadcrumbs. Shake off any excess coating.

Step 9

In a deep skillet or pot, heat the oil over medium heat. Add the balls and fry until cooked through on all sides, about 7–8 minutes.

Step 10

Transfer to paper towels to absorb excess fat.

Step 11

Serve warm or completely chilled.
