Scottish Oat Pancakes

Recipe adapted from the book 'Bon Appétit' by John Smith and Michael Johnson.
Ingredients
- Oat flakes 5 oz
- Wheat Flour 0 oz
- Grated Pecorino Pepato Cheese 3 tablespoons
- Milk 0 fl oz
- Butter 0 oz
- Activated Baking Soda a pinch
- Whole egg 1 piece
- Salt a pinch
Step-by-Step Guide
Step 1
Mix the oat flakes, flour, salt, cheese, add baking soda and butter, and rub together.
Step 2
Slowly pour in the milk, knead the dough, and roll it out into a sheet.
Step 3
Cut out circles about 10 cm in diameter, and cut each circle into 4 pieces.
Step 4
Brush the edges of the pancakes with egg yolk and place in an oven preheated to 355°F. Bake until golden brown.
