Ingredients
- Turnips 2 pieces
- Dijon Mustard 1 teaspoon
- Butter 5 teaspoons
- Coriander essential oil 1 teaspoon
- Green onion tops 4 pieces
- Salt to taste
- Ground Black Pepper to taste
- Scallops 4 pieces
- Oranges 1 piece
Step-by-Step Guide
Step 1
Peel the carrots and cut them into thin strips lengthwise.
Step 2
Finely chop the onions.
Step 3
Juice the orange and mix the juice with the coriander seeds in a small saucepan.
Step 4
Boil the carrots and onions in the orange juice for 5 minutes, then add the mustard and butter, seasoning with salt and pepper to taste.

Sear the scallops in olive oil until golden brown.

Pour the juices from the searing into the saucepan with the sauce.
Step 7
Arrange the scallops on plates, drizzle with the vegetable sauce, and garnish with a sprig of tarragon.
