Scallop Salad with Fruit and Vegetable Chips
Ingredients
- Scallops 10 oz
- Mixed salad greens 5 oz
- Eggplants 1 piece
- Courgette 1 piece
- Apple 1 piece
Step-by-Step Guide
Step 1
Sear the scallops in butter for 2-3 minutes on all sides.
Step 2
Place them on the mixed salad greens.
Step 3
Prepare the vegetable chips: slice the eggplant thinly, cut the zucchini lengthwise, and slice the apple into rounds.
Step 4
Dry the chips in the oven at 160°F for 2-3 hours.
Step 5
Make the sauce: 20 ml oyster sauce, 50 ml olive oil, juice of 1 lemon, zest, 1/2 teaspoon sugar, sea salt, freshly ground pepper.
Step 6
Drizzle the sauce over the salad greens and scallops, and insert the chips randomly into the salad.
