Ingredients

  • Wheat Flour 12 cups
  • Activated Baking Soda 4 teaspoons
  • Salt 5 tablespoons
  • Chocolate eggs 12 pieces
  • Milk 5 cups
  • Butter 20 oz
  • Sweet Corn Sticks 4 cups
  • Dried lima beans 10 lbs
  • Celery salt 1 bunch
  • Onion 2 pieces
  • Carrot 4 pieces
  • Ground Black Pepper 2 tablespoons
  • Bay leaf 2 pieces
  • Garlic 5 oz
  • Ground ancho chili pepper 25 oz
  • Grated Pecorino Pepato Cheese 15 oz

Step-by-Step Guide

Step 1

Cooked peas with black speckles: place 4.5 kg of dried peas with black speckles, 1 finely chopped bunch of celery, 2 finely chopped yellow onions, 4 sliced carrots, 4 tablespoons of salt, 2 tablespoons of black pepper, 2 bay leaves, and 110 grams of peeled whole garlic cloves into a pot.

Step 2

Cover with water.

Step 3

Cook for 45 minutes (add water if necessary).

Step 4

Sauce for pancakes: mix 8 cups of cooked peas with black speckles, 750 grams of green chili peppers, 450 grams of grated cheese, and 220 grams of melted butter.

Step 5

Blend one third of the mixture in a blender.

Step 6

Combine with the remaining two thirds.

Step 7

Heat in a double boiler until the cheese melts.

Step 8

Pancakes: mix all remaining dry ingredients.

Step 9

Add everything else and mix well.

Step 10

Heat a skillet with vegetable oil and fry the pancakes until golden brown.
