- Pike Caviar 0 oz
- Chum Salmon Caviar 0 oz
- Blue Crabs 5 oz
- Orange zest 0 oz
- Mayonnaise 5 oz
- Sweet Chili Sauce 0 fl oz
- Mascarpone Cheese Unagrande 0 oz
- Lime Juice 0 fl oz
- Butter 5 oz
- Ocean salt 0 oz
- Chocolate eggs 4 pieces
- Sugar 0 oz
- Milk 5 fl oz
- Water 5 fl oz
- Wheat Flour 5 oz
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
First, prepare the filling for the eclairs. Finely chop the crab, add a tablespoon of mayonnaise, a pinch of lime zest, salt, and pepper to taste. Mix well.
Step 2
Fill a piping bag with the resulting mixture. Set aside.
Step 3
Prepare the Asian sauce. In a deep bowl, combine 100 grams of mayonnaise, sweet chili sauce, mascarpone, a pinch of lime zest, and lime juice. Mix until smooth.
Step 4
Prepare the eclair dough. In a saucepan, bring butter, milk, sugar, salt, and water to a boil.
Step 5
Add the eggs and flour, and mix well. Fill a piping bag with the dough.
Step 6
Pipe the eclairs onto a silicone mat.
Step 7
Bake at 355°F for 10–13 minutes. Remove the eclairs and let them cool.
Step 8
Using a piping bag, fill the cooled eclairs with the crab filling.
Step 9
Drizzle with the Asian sauce.
Step 10
Garnish with caviar.
