Ingredients

  • Green Tagliatelle Pasta 5 oz
  • Broccoli 5 oz
  • Olive Oil 0 fl oz
  • Sausages 5 oz
  • Garlic 1 clove
  • Anchovies 2 pieces
  • Chili Flakes a pinch
  • Dry White Wine 5 fl oz
  • Parmesan Cheese 0 oz
  • Olive Oil to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Cook the pasta in a pot of boiling salted water according to the package instructions, then drain, reserving a full cup of starchy cooking water.

Step 2

Meanwhile, trim the broccoli florets (cut thick florets in half lengthwise to make them more tender).

Step 3

Heat a large skillet over medium heat with olive oil. Squeeze the sausage meat out of the casings into the skillet, breaking it up with a wooden spoon.

Step 4

Once the meat is browned, peel and roughly chop the garlic, then add it along with the anchovies, chili flakes, broccoli, and wine. Let it simmer while the pasta cooks.

Step 5

Drain the pasta in a colander (saving some cooking water), then add it to the skillet with the sausages, grate the Parmesan cheese over it, and drizzle with extra virgin olive oil.

Step 6

Toss again, adding a little reserved cooking water if necessary to create a light creamy sauce. Taste and season to perfection, then serve immediately.
