Sardines wrapped in bacon
Ingredients
- Bacon 12 pieces
- Canned Mackerel in Oil 24 pieces
- White bread 8 pieces
- Vegetable Oil 5 fl oz
- Herb Bouquet 0 oz
Step-by-Step Guide
Step 1
Heat a little oil in a skillet, pat the sardines dry with paper towels, cut the bacon slices in half, wrap the sardines with the bacon, and secure them with a toothpick.
Step 2
Sauté the sardines for two minutes until the bacon becomes crispy. Transfer the fish to paper towels, and in the same skillet, add more oil and fry the slices of bread (without crusts), turning them until they are golden brown, about half a minute, and also transfer them to paper towels.
Step 3
Remove the toothpicks, arrange the fish on the bread with three pieces per slice, and sprinkle with herbs (a little parsley, tarragon, basil, and scallions).
