Samara Zucchini Caviar
Ingredients
- Courgette 5 lbs
- Onion 15 oz
- Carrot 15 oz
- Salt 1 tablespoon
- Sugar 5 oz
- Passata Tomato Sauce 10 oz
- Vegetable Oil 5 fl oz
- Mayonnaise 5 oz
- Ground Black Pepper 1 teaspoon
- Fresh basil leaves 0 oz
- Garlic 0 oz
Step-by-Step Guide
Step 1
Slice the onion into half rings and sauté.
Step 2
Pass the zucchini, garlic, carrot, sautéed onion, and basil through a meat grinder.
Step 3
Place the ground mixture into a pot and add salt, pepper, sugar, and vegetable oil. Cook on low heat for 1.5 hours, stirring occasionally.
Step 4
Then add the tomato paste and mayonnaise, and continue to simmer for another 30 minutes.
Step 5
Finally, distribute the mixture into sterilized 500-gram jars (should yield 5 jars) and seal with lids.
