Description
For pickling, you can use both ripe and green tomatoes, but they must be of the same ripeness.
Ingredients
- Water 15 qt
- Salt 30 oz
- Baku Tomatoes 20 lbs
- Tarragon to taste
- Savory to taste
- Black Currant Leaves to taste
- Cherry to taste
Step-by-Step Guide
Step 1
Before pickling, prepare a barrel, wash it thoroughly, and steam it. Sort the tomatoes, discarding any that are spoiled, rinse them with water, and layer them in the barrel. It is recommended to alternate green tomatoes with dill, tarragon, savory, as well as cherry and black currant leaves.
Step 2
While layering, occasionally shake the barrel to pack the tomatoes tightly. The tomatoes should be packed to the top of the barrel, and then covered with brine.
Step 3
Cover the barrel with a wooden circle and place a light weight on top. Store the tomatoes in a cool place (they may be ready in 40-50 days).
