Step-by-Step Guide
Step 1
Cut the salmon fillet into cubes, season with salt, pepper, and chicken yolk.
Step 2
Place in a metal mold and refrigerate until serving.
Step 3
For the goat cheese cream, mash the goat cheese and mix it with the remaining finely chopped ingredients, stirring well.
Step 4
Place the salmon tartare on a plate and top it with the goat cheese cream.
Step 5
Decorate and arrange the dish with the remaining ingredients as shown in the photograph.
