Salmon Sushi in Beet Greens

Ingredients

  • Salmon 5 oz
  • Wasabi 1 teaspoon
  • Sushi Rice 5 oz
  • Mustard Greens 1 bunch
  • Salt to taste
  • Red Caviar 3 tablespoons

Step-by-Step Guide

Step 1

Rinse the salmon fillet and cut it into the thinnest slices. Spread wasabi on one side of each slice.

Step 2

Cut the beet greens in half, remove the stems, and blanch in boiling salted water for 1 minute. Rinse the leaves in cold water and lay them on a towel to dry.

Step 3

Cook the sushi rice. With wet hands, form tight balls from the rice.

Step 4

Make indentations in the rice balls and place the salmon slices so that the side with wasabi touches the rice.

Step 5

Wrap all the rice balls in beet greens.

Step 6

Chill the sushi before serving.
