Clean the fish of skin and bones, slice it thinly, and arrange it in neat rows on a dish or plate, garnishing with sprigs of parsley or lettuce leaves.

Step 2

For the garnish, place the lemon cut into wedges or slices. Very salty chum salmon can be soaked whole in cold water for 3-4 hours. After removing from the water, dry with a towel, brush with vegetable oil, and let sit for 1 to 1.5 hours in a cool place or on ice before slicing thinly.
