
Salmon Skewers with Bacon

Description
You can thread royal shrimp between pieces of salmon, drizzled with lemon juice. Serve with mashed potatoes, boiled young potatoes in their skins, or a light vegetable salad. A light white wine pairs well with this dish.
Ingredients
- Salmon 15 oz
- Semi-Smoked Sausage 5 oz
- Ground Black Pepper to taste
- Fresh Rose Hips to taste
- Meyer Lemon Juice to taste
Step-by-Step Guide
Step 1
Remove the skin and bones from the fresh salmon (or trout). Cut into square pieces of equal size. Season with pepper, drizzle with lemon juice, and sprinkle with rosemary. No need to add salt, as the bacon is already salty enough.
Step 2
Wrap each piece of salmon with a strip of bacon. Thread 3–4 pieces of salmon onto a skewer.
Step 3
Grill on all sides for about 10 minutes until a golden crust forms.
