Salmon Rolls with Cheese, Cucumbers, and Tarragon
Ingredients
- Lightly Salted Red Fish 5 oz
- Semi-soft cream cheese 5 oz
- Tarragon 0 oz
- Lemon 1 piece
- Cornichons 2 pieces
- Olive Oil 4 tablespoons
- Mustard Greens 1 teaspoon
- Green Butter 1 bunch
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Zest the lemon and grate it finely. Squeeze the juice from the lemon. Chop the cornichons and tarragon. Mix the cheese, cucumbers, half of the tarragon, 2 teaspoons of lemon juice, salt, and pepper.
Step 2
Slice the fish into pieces and lay them on plastic wrap. Place the cheese filling on the fish, roll them up, and refrigerate for 1 hour.
Step 3
Make the sauce. Mix the remaining tarragon, zest, lemon juice, mustard, olive oil, salt, and pepper.
Step 4
Carefully slice the rolls, then place them on lettuce leaves and drizzle with the sauce.
