Salmon Marinated in Beetroot and Oranges

Ingredients
- Salmon ½ piece
- Brown Sugar 0 oz
- Coarse Salt 5 oz
- Beetroot 3 pieces
- Oranges 3 pieces
- Chervil to taste
- Ground clove ½ teaspoon
Step-by-Step Guide
Step 1
Take half of the salmon and clean it of bones and scales.
Step 2
Sprinkle with sugar and salt.
Step 3
Grate the raw beetroot. Grate the zest of the oranges on a fine grater and squeeze out the juice.
Step 4
In a bowl, mix the beetroot, juice, and zest of the oranges, chervil stems, and allspice. Place the mixture in a mold, level it out, and lay the fish fillet on top, flesh side down. Leave to marinate for 8-12 hours.
Step 5
Remove the fish from the marinade and slice it thinly, removing the skin. Serve with mustard and lime vinaigrette.
