  • Shallot 2 heads
  • Mayonnaise 2½ tablespoons
  • Buttermilk 2 tablespoons
  • Meyer Lemon Juice 3 tablespoons
  • Olive Oil 5 tablespoons
  • Chives 1 tablespoon
  • Chopped Green Onions 1 tablespoon
  • Dijon Mustard 1 teaspoon
  • Sugar a pinch
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Tomatoes 2 pieces
  • Mixed salad greens 5 oz
  • Large eggs 4 pieces
  • Avocado 1 piece
  • Courgette ½ piece
  • Ocean salt to taste
  • White bread 8 slices
  • Butter 3 tablespoons

Step-by-Step Guide

Step 1

Mix shallots, mayonnaise, buttermilk, lemon juice, oil, chives, dill, and Dijon mustard in a small bowl until smooth. Add sugar, salt, and pepper.

Step 2

Can be prepared in advance: the dressing can be made up to 8 hours before serving. Cover and refrigerate.

Step 3

Arrange tomatoes, salad leaves, eggs, avocado, cucumber, and shallots on a large platter. Drizzle with olive oil and lemon juice, and season with salt.

Step 4

Spread butter on one side of each slice of bread. Assemble sandwiches with bread, salad, and dressing.
