Ingredients

  • Salad Potatoes 0 lbs
  • Garlic 2 heads
  • Butter 0 oz
  • Milk 1 cup
  • Salt to taste
  • Ground Black Pepper to taste
  • Chopped Sage Leaves ¼ cup
  • Chili Flakes to taste
  • Grated Pecorino Pepato Cheese to taste

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Place the heads of garlic on a baking sheet, lightly drizzle with olive oil, and bake for 20-25 minutes until the cloves are soft. Transfer to a bowl and pour the remaining olive oil over them. Leave in the refrigerator overnight.

Step 2

Peel the potatoes, cut them into small pieces, and boil in salted water until soft, about 15-20 minutes. Drain and mash or pass through a sieve until smooth.

Step 3

Add the garlic pulp, butter, garlic-infused olive oil, and milk. Season with salt and pepper. Stir in the chopped parsley, Parmesan, and red pepper flakes if desired. Mix well.
