
Rustic Chicken Liver

Description
Use only chicken liver for a more delicate flavor. Cut everything by hand to avoid turning it into a pâté. Serve in small portions on a plate with fresh cucumbers and tomatoes, pickled cucumbers, and pickled beets. Pair with a dry white wine.
Ingredients
- Chicken Liver 15 oz
- Onion 15 oz
- Farm fresh eggs 3 pieces
- Chicken skin with fat 6 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the eggs in boiling water until hard. Cool under cold water and peel.
Step 2
Preheat the grill. Place the liver on the grill and cook for 3 minutes on each side. Transfer to a cutting board and chop finely.
Step 3
Melt the chicken fat in a pan over medium heat. Add the finely chopped onion and sauté until soft, stirring until it starts to brown. Add the liver and sauté for another minute. Remove from heat and transfer to a bowl.
Step 4
Add the finely chopped eggs, season with salt and pepper. Mix well and chill for 3 hours.
