Royal Shrimp with Dill Mayonnaise
Ingredients
- Olive Oil 5 fl oz
- Dijon Mustard 2 tablespoons
- Meyer Lemon Juice 5½ tablespoons
- Honey 2 tablespoons
- Dill 4 tablespoons
- King Prawns 20 pieces
- Mayonnaise 5 oz
- Cornichons 1 piece
- Capers 1 teaspoon
- Garlic 1 clove
Step-by-Step Guide
Step 1
For the marinade, mix the oil, 4 tablespoons of lemon juice, mustard, honey, and half of the dill. Pour over the shrimp and mix well. Cover and refrigerate for 2 hours, stirring occasionally.
Step 2
For the mayonnaise, mix the remaining dill, mayonnaise, the remaining lemon juice, chopped cornichon, capers, and garlic. Cover and refrigerate.
Step 3
Preheat the grill and lightly grease with oil. Grill the shrimp for 4 minutes, turning when the side turns pink. Serve with dill mayonnaise.
