- New Potatoes 20 oz
- Olive Oil 1 tablespoon
- Coarse Salt to taste
- Ground Black Pepper to taste
- Fresh Rose Hips 2 sprigs

Preheat the oven to 430°F.

Place the unpeeled potatoes in a pot, cover with water, bring to a boil, and cook until tender, about 20 minutes.

Drain, let cool slightly, and cut in half.

Then place on a baking sheet, drizzle with olive oil, season with salt and pepper, and sprinkle with rosemary leaves. Toss and spread out evenly.
