Roasted young carrots with orange juice and ginger
Ingredients
- Young Carrots 5 lbs
- Orange Juice 5 fl oz
- Olive Oil 5 fl oz
- Honey 0 oz
- Apple Cider Vinegar 0 fl oz
- Fresh Thyme 5 pieces
- Fresh Ginger 0 oz
- Sea Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a large pot, bring water to a boil and add salt. Add the carrots and cook for about one minute.
Step 3
Drain the carrots in a colander, then return them to the hot pot for a few minutes to cook further from the heat and steam.
Step 4
Then place them on a baking sheet, drizzle with olive oil, honey, grated ginger, and orange juice. Mix everything together. Top with thyme sprigs, drizzle with vinegar, and season with salt and pepper.
Step 5
Roast for 20-40 minutes (depending on your preference for how soft or firm you want the carrots).
