
Roasted Tomato and Basil Sauce

Description
Preheat the oven to 190 degrees Celsius.
Ingredients
- Tomatoes 25 oz
- Fresh basil leaves 20 pieces
- Olive Oil 1 tablespoon
- Garlic 1 clove
- Spaghetti 10 oz
- Parmesan Cheese 5 oz
- Balsamic Vinegar 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the tomatoes, cut them in half, and place them cut side up on a baking sheet. Season with salt and pepper. Drizzle with olive oil, sprinkle with minced garlic, and cover with basil leaves that have been previously moistened with olive oil. Place in the oven and roast for 60 minutes.
Step 2
Remove the tomatoes and place them in a food processor along with the drained juice, add vinegar, and blend until it reaches a slightly chunky puree.
Step 3
Drain the water from the cooked pasta and immediately add the warmed sauce. Before serving, garnish with fresh basil leaves and sprinkle with Parmesan.
