Roasted Radish Tartare
Ingredients
- Radish 5 oz
- Young zucchini 5 oz
- Broccoli 5 oz
- Mustard Greens 0 oz
- Truffle Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients. Preheat the oven to 340°F.
Step 2
Place the radishes in the oven for 10 minutes.
Step 3
Remove small florets from the broccoli, no larger than a pea.
Step 4
In a skillet, heat vegetable oil and sauté the broccoli for just 1 minute, lightly salting it.
Step 5
Cut the roasted radishes into very small cubes.
Step 6
Cut the raw zucchini into similarly small cubes.
Step 7
Finely chop the radish greens.
Step 8
Mix all the prepared vegetables together.
Step 9
Season with salt, pepper, and drizzle with truffle oil.
Step 10
Serve the roasted radish tartare with sparkling wine.
