Roasted Pumpkin with Shallots and Sage

Ingredients
- Pumpkin 5 lbs
- Shallot 4 pieces
- Olive Oil 3 tablespoons
- Chopped Sage Leaves ¼ cup
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 445°F.
Step 2
Peel the pumpkin and remove the seeds, then cut it into small pieces. Peel the shallots and cut them lengthwise into 4 pieces.
Step 3
Spread the pumpkin, shallots, and sage leaves on 2 baking sheets. Drizzle with olive oil and toss. Season with salt and pepper.
Step 4
Roast until tender for 30–35 minutes, stirring occasionally.
