Roasted Pumpkin with Oranges and Pistachios
Ingredients
- Olive Oil 1 tablespoon
- Shallot 2 pieces
- Orange zest 1 teaspoon
- Orange juice concentrate ¾ cup
- Butternut Squash 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Chopped almonds 2 tablespoons
Step-by-Step Guide
Step 1
Cut the pumpkin in half, remove the seeds, and slice thinly to yield about 4 cups.
Step 2
Heat the olive oil in a skillet over medium heat. Add the sliced shallots and sauté until soft, about 2 minutes.
Step 3
Add the pumpkin, zest, and orange juice. Season with salt and pepper. Reduce to low heat, cover, and cook for 6–8 minutes.
Step 4
Remove the lid and cook, stirring, until the pumpkin is tender and golden, about 12–15 minutes.
Step 5
Sprinkle with pistachios and serve.
