Roasted Garlic and Olive Oil Dressing

Ingredients

  • Garlic 1 head
  • Olive Oil 0 fl oz
  • Balsamic Vinegar 0 fl oz
  • Lime Juice 0 fl oz
  • Coarse Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

You will need 1 large head of garlic or 2 small ones. Remove the outer skin, leaving only the skin on the cloves, but do not damage the integrity of the head. Cut off the top of the head, slightly trimming the tops of the cloves. Place on a sheet of foil and drizzle with 1 tablespoon of olive oil. Wrap it up and place it in the oven for 40 minutes to 1 hour, until the garlic is very soft. Unwrap and let it cool slightly.

Step 3

Squeeze the flesh of the garlic from the cloves into a blender. Add the remaining oil, vinegar, lime juice, salt, and pepper. Blend until smooth.
