Roasted Cauliflower with Pasta and Lemon Zest
Ingredients
- Cauliflower 0 lbs
- Capers ¼ cup
- Spanish onions 1 head
- Olive Oil ¼ cup
- Coarse Salt to taste
- Ground Black Pepper to taste
- Conchiglie Pasta 10 oz
- Chopped Sage Leaves ½ cup
- Grated Lemon Zest 2 tablespoons
Step-by-Step Guide
Step 1
Preheat the oven to 445°F.
Step 2
Cut the cauliflower into small florets. Slice the onion thinly.
Step 3
In a bowl, mix the cauliflower, onion, capers, and 2 tablespoons of olive oil. Season with salt and pepper. Spread the vegetables in a single layer on a baking sheet. Bake in the oven for 40 minutes until tender and golden.
Step 4
Meanwhile, cook the pasta in boiling salted water until al dente. Drain.
Step 5
Add the remaining olive oil, parsley, and lemon zest to the pasta. Then add the cauliflower, season with salt and pepper.
