Roasted Butternut Squash with Chorizo
Ingredients
- Butternut Squash 2 pieces
- Olive Oil to taste
- Fresh Rose Hips 4 sprigs
- Garlic 1 head
- Chorizo 8 pieces
- Manchego cheese 10 oz
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
Place a large piece of oiled foil on a baking sheet and lay the 2 halves of the squash cut side up on top.
Step 3
Drizzle with olive oil and sprinkle with salt and pepper.
Step 4
Sprinkle half of the rosemary around the squash and place half a head of garlic, cut horizontally, next to it. Wrap in foil.
Step 5
Do the same with the second squash.
Step 6
Bake until tender, about 45 minutes.
Step 7
Unwrap the foil, set aside the garlic, and top the squash with cheese and chorizo, dividing it among the 4 halves. Wrap again and bake for another 15 minutes.
Step 8
Serve cut into pieces.
