Ingredients
- Butternut Squash 15 oz
- Olive Oil 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Butter 2 tablespoons
- Onion 1 head
- Garlic 1 clove
- Chopped Sage Leaves 12 pieces
- Goat cheese ¼ cup
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a bowl, mix the peeled and diced butternut squash with 1 tablespoon of olive oil. Season with salt and pepper. Transfer to a baking sheet and roast in the oven for 30-40 minutes until tender.
Step 3
Meanwhile, in a skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Add the thinly sliced onion and cook over low heat for 40-50 minutes until the onion begins to caramelize. Add the minced garlic and cook for a few more minutes. Remove from heat.
Step 4
Melt the remaining butter in the skillet and heat until light brown. Add the sage leaves and cook for another 2-3 minutes until the leaves become crispy. Add the squash, onion, and cheese, and stir until the cheese begins to melt. Remove from heat and serve.
