Preheat the oven to 375°F.

Peel the shallots and place them on a sheet of foil. Drizzle with a tablespoon of olive oil and toss. Wrap and place in the oven for 45 minutes until soft. Open the foil and let cool.

Meanwhile, trim the old leaves from the Brussels sprouts and cut the heads in half or into quarters depending on their size.

Place the Brussels sprouts and shallots in a baking dish and toss with the remaining olive oil. Season with salt.

Increase the oven temperature to 390°F and roast the vegetables for 25–35 minutes, until the Brussels sprouts are tender and the vegetables are browned, stirring occasionally.
