
Roasted Beets with Mustard and Green Onions

Choose small beets, about 14–16 pieces.
Ingredients
- Yellow Beets 0 lbs
- Olive Oil 2 teaspoons
- Chopped Green Onions ¼ cup
- Dijon Mustard 2 tablespoons
- Meyer Lemon Juice 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
Clean the beets by removing the roots and greens, wash them well, and cut them in half lengthwise. Toss with olive oil and place on a baking sheet, cut side down. Roast for about 30 minutes until tender. Cool for 5 minutes and peel the skin.
Step 3
Slice the beets into thin strips and transfer to a bowl. Add the green onions, mustard, and lemon juice. Season with salt and pepper.
