Ingredients
- Canned Baby Beets 20 oz
- Olive Oil 4 tablespoons
- Ocean salt to taste
- Ground Black Pepper to taste
- Mint Leaves 4 tablespoons

Preheat the oven to 390°F.
Step 2
Wash the beets thoroughly and trim the tops. Place them on a baking sheet lined with foil and wrap them in a pouch. Bake in the oven for about 1.5 hours until tender. Let cool.
Step 3
Peel the beets and slice them into small rounds. Transfer to a serving dish and drizzle with olive oil. Then sprinkle with salt and pepper. Gently toss and top with finely chopped mint.
