Description

Roasted Beets with Goat Cheese and Balsamic Caramel

Ingredients

  • Yellow Beets 5 pieces
  • Thyme 1 bunch
  • Salt to taste
  • Ground Black Pepper to taste
  • Goat cheese 5 oz
  • Semi-Smoked Sausage 5 oz
  • Sugar 0 oz
  • Balsamic Vinegar 5 fl oz

Step-by-Step Guide

Step 1

Wrap 5 small round beets in foil and roast in the oven at 355°F for 1.5 hours. Add thyme and a little balsamic vinegar to the foil with the beets.

Step 2

Slice the goat cheese into rounds. Once the beets are roasted, let them cool and cut them into neat rounds.

Step 3

Layer the beets with goat cheese: beet round — cheese — another beet.

Step 4

Prepare the balsamic caramel: reduce the balsamic vinegar with sugar until thick.

Step 5

Spoon the hot caramel onto the top beet round with a teaspoon — it will set right on the beet.

Step 6

Carefully wrap the beet Napoleon with bacon — sprinkle with salt and freshly ground pepper on top.

Step 7

Place on a toast made from white baguette.
