Roasted Beets in Balsamic Glaze and Orange Zest
Ingredients
- Yellow Beets 0 lbs
- Olive Oil to taste
- Salt to taste
- Sugar 2 teaspoons
- Balsamic Vinegar ½ cup
- Orange zest 2 teaspoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Wash the beets thoroughly and dry them with a paper towel (the beets should be medium-sized and preferably uniform).
Step 2
Preheat the oven to 390°F.
Step 3
Line a baking dish with foil, place the beets on it. Brush each beet with olive oil and sprinkle with salt. Cover with a second sheet of foil and seal tightly. Roast for 1–2 hours until tender — the roasting time depends on the size of the beets.
Step 4
Meanwhile, prepare the balsamic glaze. In a saucepan, combine balsamic vinegar and sugar. Bring to a boil, stirring, and cook until syrupy. Remove from heat.
Step 5
Remove the beets from the oven, let them cool slightly, and peel. Cut into medium pieces and transfer to a bowl. Drizzle with the glaze and add 1 teaspoon of orange zest. Season with salt and pepper and gently toss.
Step 6
Serve, garnished with the remaining orange zest.
