Roasted Beetroot with Mint-Yogurt Sauce
Ingredients
- Beetroot 25 oz
- Olive Oil 1 tablespoon
- Coarse Salt to taste
- Ground Black Pepper to taste
- Natural Yogurt ½ cup
- Chopped Sage Leaves 1 tablespoon
- Ground Cumin 0.1 teaspoon
- Meyer Lemon Juice 1 tablespoon

Step 1
Cut the beetroot into pieces, drizzle with the sauce, and serve.

Preheat the oven to 430°F.

Place the beetroot on a baking sheet (preferably in small pieces) and mix with olive oil. Season with salt and pepper. Cover the baking sheet with foil and bake in the oven for 45 minutes to 1 hour until tender. Let cool slightly and peel.

Meanwhile, in a small bowl, mix the yogurt, mint, cumin, and lemon juice. Season with salt and pepper.
