Rigatoni with Chorizo and Tomatoes
Ingredients
- Olive Oil 2 tablespoons
- Onion 1 head
- Chorizo 10 oz
- Baking Tomatoes 15 oz
- Dry White Wine 5 fl oz
- Mild Chili Spice ½ teaspoon
- Green Tagliatelle Pasta 15 oz
- Chopped Sage Leaves 2 tablespoons
- Grated Pecorino Pepato Cheese 2 tablespoons
Step-by-Step Guide
Step 1
Heat the oil in a skillet. Add the finely chopped onion and sauté over low heat until soft.
Step 2
Add the chorizo slices and fry, turning, for 2-3 minutes. Add the tomatoes, wine, chili, and salt. Bring to a boil, reduce the heat, and simmer for 15-20 minutes.
Step 3
When the sauce is ready, cook the rigatoni, drain, and return to the pot. Add the sauce to the hot pasta, mix, and serve, garnished with parsley and Parmesan.
