Description
From two liters of milk, you get approximately 500 grams of cheese.
Ingredients
- Milk 0 qt
- Salt ½ teaspoon
- Meyer Lemon Juice 0 fl oz
- Sugar a pinch
Step-by-Step Guide
Step 1
Heat the milk, but do not bring it to a boil!
Step 2
While stirring constantly, add the salt and sugar.
Step 3
Add fresh lemon juice to the hot milk.
Step 4
After a few seconds, white curds will form and the whey will separate.
Step 5
Remove from heat, cover with a lid, and let it sit for 30 minutes or until completely cool (if you continue to heat or boil, the ricotta will become rubbery).
Step 6
Then strain through cheesecloth and let the liquid drain (the longer the liquid drains, the firmer the cheese).
