Rice with Carrots, Lemon, and Mint
Ingredients
- Olive Oil ½ cup
- Onion 1 head
- Carrot 1 piece
- Salt to taste
- Minced garlic 1 tablespoon
- Ground Black Pepper to taste
- Water 3½ cups
- Citrus Zest Mix 1 teaspoon
- Long-Grain Rice 1½ cups
- Meyer Lemon Juice 2 tablespoons
- Green onion tops 4 pieces
- Chopped Sage Leaves 0 oz
Step-by-Step Guide
Step 1
Heat the olive oil in a pot over low heat. Add the finely chopped onion and grated carrot (or finely chopped). Sauté, stirring, for 10 minutes.
Step 2
Add the garlic and sauté for another 3 minutes. Season with salt and pepper.
Step 3
Add water, lemon zest, and lemon juice to the pot. Bring to a boil, then add the rice, stir, reduce the heat, and cook covered for about 20 minutes until the rice is done.
Step 4
Remove from heat and stir in the chopped green onions and mint.
