  • Wheat Flour 1½ tablespoons
  • Cotton Oil 2 tablespoons
  • Milk 25 fl oz
  • Long-Grain Rice 10 oz
  • Farm fresh eggs 4 pieces
  • Gruyère cheese 5 oz
  • Salt to taste
  • Egg white 2 pieces

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Grease the inside of a 22 cm soufflé dish. In a saucepan, melt 25 grams of butter along with the corn oil. Add the flour while stirring and continue to stir for another 2 minutes. Gradually add the milk. Season with salt and keep stirring for another 8 minutes until thickened.

Step 2

Remove the saucepan from the heat and let the mixture cool slightly. Then, one at a time, add the egg yolks, half of the cheese, and 85 grams of rice. Stir in the remaining pieces of butter.

Step 3

In a dry, clean bowl, whip the salted egg whites until stiff peaks form, then add the second half of the cheese. Now combine the cooked rice with the egg whites and the rice with the egg yolks, and pour everything into the baking dish. Sprinkle with cheese on top and bake for 20 minutes. Then increase the heat to 430°F and leave the soufflé in the oven for another 15 minutes—it should rise well and become golden brown. Serve immediately upon readiness.
