  • Coconut Milk 15 fl oz
  • Pistachios 0 oz
  • Parboiled and wild rice blend 5 oz
  • Honey 2 spoons
  • Chia Seeds 1 tablespoon
  • Butter 0 oz
  • Strawberry to taste
  • Sugar to taste
  • Salt to taste
  • Cinnamon to taste

Pour 400 ml of water into a pot and place it over heat. Once the water is boiling, add the coconut milk.

While the water and milk are heating up, toast the pine nuts in a dry skillet until golden brown. Sprinkle them with a pinch of salt.

Add the rice to the boiling mixture of coconut milk and water. Cook for about 7 minutes over low heat, stirring occasionally, then add a pinch of salt and 2 tablespoons of honey. Continue to cook over low heat, stirring.

If you want a more porridge-like consistency, you should add some water and continue cooking. To check if the rice is ready, taste it. It should take about 25 minutes to cook.

When the rice grains are cooked, you can add the chia seeds. Chia seeds quickly absorb water, so you need to pour an additional 100 ml of water into the porridge. Stir the porridge with the chia seeds and add 20 grams of butter. Cover the porridge with a lid and let it sit for 5 minutes.

Taste the porridge. Add sugar or honey, and salt to taste. Serve the porridge in bowls, garnish with strawberries and pine nuts, sprinkle with cinnamon, and serve.
