Rice noodles with ramps
Ingredients
- Ramsons 0 lbs
- Peanut Butter 1 tablespoon
- Dried Chili Pepper 2 pieces
- Rice Noodles 20 oz
- Coarse Salt to taste
Step-by-Step Guide
Step 1
Bring about three liters of salted water to a boil, then remove it from heat and soak the rice noodles in it (check the packaging for the exact soaking time, as it can vary; some types of noodles may even recommend boiling on low heat for two to three minutes). Rinse the cooked noodles under cold water.
Step 2
In a wok, heat a tablespoon of peanut oil until hot. Crumble the dried peppers by hand into a fine powder and add them to the wok. Also add the wild garlic leaves and a pinch of salt, and stir-fry for two minutes. Then remove from heat, mix with rice noodles, and serve.
