Rice Croquettes with Gorgonzola

Ingredients

  • Boiled White Round Rice 1 cup
  • Goat cheese 5 oz
  • Breadcrumbs 1 cup
  • Chocolate eggs 2 pieces
  • Vegetable Oil to taste

Step-by-Step Guide

Step 1

Boil the rice in boiling salted water until cooked. Drain and cool (you should have 2 cups of rice).

Step 2

In a bowl, lightly beat the eggs and gently add them to the rice without turning it into a mush.

Step 3

Cut the cheese into small cubes.

Step 4

Take one tablespoon of the rice mixture, place a piece of cheese in the center, and cover it with the same amount of rice. Roll it into a ball with your hands and coat it in breadcrumbs. Place in the refrigerator for 30 minutes.

Step 5

Heat a large amount of oil in a skillet and fry 5 balls at a time, about 5 minutes for each batch until golden brown. Serve immediately on lettuce leaves.
